Alas, Veggie Week must come to an end. We feel your sadness. But don’t worry, this isn’t the last you’ll see of vegetables on this blog! Anyway, to close out this week, we’ve decided to share one of our favorite spinach recipes with you. Of course, our favorite way to eat spinach is by not cooking it at all and rather eating it in a salad.
By now you know that we love to use videos to help you with your cooking endeavors. So with out further ado, here is the one and only expert on spinach…
Like Popeye said…er…mumbled, “you has to eat it to get health, strength and vitality.” We’ve derived our recipe from Tyler Florance’s own version with a few minor changes.
Servings – 2 to 3
Prep time – 5 minutes
Cook time – 10 minutes
10 ounces of baby spinach leaves (found near salad or lettuce aisle)
1 small chopped onion
2 cloves finely chopped garlic
1 tablespoon olive oil
1 tablespoon butter
Salt and Pepper
1. Rinse your spinach leaves under cool water and drain off as much excess water possible.
2. In a pan over medium heat, melt butter and add olive oil, onions and garlic. Cook for 2 to 3 minutes or until onions are soft.
4. Season with a pinch of salt and pepper and lightly toss in the pan.
